Method:

What You Need:
- 1 whole chicken, spatchcocked, or 4–6 bone-in chicken pieces

What You Need:
- 1 whole packer brisket (10–14 lbs) or flat cut
- ¼ cup Chef Stef BBQ Seasoning
- 2 tablespoons coarse black pepper (optional, for extra bark)
- Yellow mustard as a binder
Method:
- Trim the fat. Leave about ¼ inch of fat cap — enough to baste the meat as it cooks, but not so much it won't render down.
